Vinegar Slaw - Summer Side

If you like vinegar like I do, you will love this side dish. It is easy to make, last several days, and is a great compliment to any meal. It can be made ahead of time if you are having a BBQ or heading to a friend's party. I also love to add this slaw to lettuce with some chopped grilled chicken for a quick healthy lunch.

Ingredients: (side note - I am a non measuring type of cook. That is why I don't like to bake. I usually do two shakes of a spice for 1/2 teaspoon and about 4 shakes of a spice for 1 teaspoon. I use a normal sized kitchen spoon for a tablespoon. I did give you measurements below but always know you can adjust anything to your personal taste levels. Make sure to alway taste your dressing before you add your veggies.)
Salad:
- 2 handfuls of shredded carrots
- 1-1.5 bag of shredded green cabbage
- 2 handfuls or 1/2 of red shredded cabbage
Tip: If you want, you can use the premixed veggie slaw bags they have at Trader Joes or your local grocery store. I usually will add in some shredded carrots for color.
Dressing:
-1/2 cup canola oil
- 2 tablespoons apple cider vinegar
- 2 tablespoons red wine vinegar
- 1/2 teaspoon celery salt
- 1 teaspoon dried mustard
- 1 teaspoon garlic powder
- 1 teaspoon salt seasoning mix
- 1 tablespoon dijon mustard
- 1 tablespoon mayonnaise
- 1/2 teaspoon honey OR a pinch of sugar
- 1 teaspoon pepper
- A pinch of salt
Whisk all ingredients together and taste.
If you don't like vinegar, start with less and add more after you mix everything together. If it makes you pucker too much, add a pinch more sugar to tame the vinegar punch.
Then add the veggies and mix.
The salt in the dish will draw out the water from the veggies. As the salad sits in the fridge it will become watery. I like to stir it every once in a while just to mix the flavors and coat all the veggies. If you forget, it's all good. Just give it a stir right before you want to serve.
Two other tips: You can make it in the salad bowl you want to serve it in and decreased your clean up. And the more air tight your storage container, the longer they will keep. I use these glass storage containers and they work extremely well.
